In 2005, the family of distilleries on the Isle of Islay grew a bit bigger with the introduction of Kilchoman, ‘Islay’s Farm Distillery’. The distillers had big plans for their small distillery, wanting to produce whisky from barley to bottle, including growing a portion of their own malt, which they have since done! But you can’t just turn up on Islay with a bag of seeds you found at the garden centre, start slinging them about the place and expect a harvest fit for excellent single malt Scotch whisky. You need to do your research and get down to some science beforehand. And that’s exactly what Kilchoman did, and that’s exactly what we put on our Kilchoman label - science.
Tasting notes:
Nose: Salty, sweet and buttered popcorn all mixed together, along with thyme honey and brisk peat.
Palate: Sticky sugar in a pan, slowly caramelising. Peat smoke wafts through the scene, but never gets in the way.
Finish: Golden barley and a subtle saline suggestion.
