From an April 1st dream back in 2016, it took founder Max Vaughan two years to turn that dream into a reality.
Max wanted a distillery near a river, for the romance, and found the perfect site in the Derwent Valley in Derbyshire, a World Heritage site. They designed and built the distillery using local engineering companies where possible, but the stills were built by McMillan Engineering in Edinburgh, one of the oldest remaining coppersmiths in the world.
House style - lightly peated malt - 6 ppm
Two core wood styles: Ex-bourbon casks from the Heaven Hill Distillery, and STR Casks, following a conversation with the late Dr. Jim Swan, from the Porto Cooperage.
This release is from an STR Cask Another release with ‘The mark of the Swan’ STR refers to a specific formula for the Shaving, Toasting and Re-Charring of Red Wine Hogsheads – A creation of the late Dr Jim Swan, that releases tons of flavour, and create a charcoal filter between the spirit and the cask which draws out impurities.
Outturn of this release: Just 548 bottles at 50% abv
Nose
Green apple, coconut, and vanilla, with a touch of smoke and brine.Toasted wholemeal and herbal thyme.
Palate
Malty with rich toffee, black cherry, and chocolate. This is sweet and earthy, that gentle peat lingering in the finish.
ABOUT THE LABEL
Our label story has a lot going on, but is set in the beautiful Derwent Valley in Derbyshire where the distillery lies.
There’s a cygnet at the water’s edge, a nod to the late Dr. Jim Swan who played a small part in the early discussions of the distillery.
There’s a general Victorian theme about this label, a nod to the region’s industrial past, except for that helicopter and parachutist that reminds us of the 2012 Olympics...
