Their first official release was launched mid April 2021 and was sold out in minutes, despite the high price tag!
This is a single grain from a mash bill of Ancient Heritage Grains: 51% corn, 34% rye, 10% wheat and 5% malted barley. Just 172 bottles make up the outturn.
All grains used are cultivated, distilled and matured within 50 miles of their Oxford distillery. It’s the first certified organic grain-to-glass distillery in the UK.
They also designed and built their own unique stills!
This is from Cask No.1 - The very first cask filled at the distillery! Starting life in a new charred 225L virgin American Oak Cask for 19 months before transferring to a French Oak 100 Litre Sauternes cask for the remainder of it’s maturation - 21 months
Nose
Fruity with notes of apples, pears, green banana and some linseed oil

Sweet orchard fruits, toasted rye bread, linseed oil and herbal thyme,
ABOUT THE LABEL
Our label looks across the park in Oxford, onto field of grains; corn, barley and wheat. Farmer of the grains, John Letts is working hard, harvesting with a scythe. The head distiller of Oxford Distillery is in the field too inspecting the corn.
In the background of the Oxford skyline, we’ve placed their stills and columns as the dreaming spires.
You might recognise that scarecrow in the field, in his lab coat, looking a little like a doctor...
