The rules of Bourbon Whisky dictate that only new charred oak barrels are used to age the whisky. Tennessee rules have a further stage, apart from being made in the state of Tennessee.
Sadly we’re not able to name this distillery, but it is a Bourbon, and you’ll notice it’s definitely labelled as a Tennessee whisky which narrows it down an awful lot! Some homework is required to establish which distillery it could have come from.
Tennessee whiskey producers are required by law to use a filtering step known as the Lincoln County Process prior to aging the whiskey.
You’ll notice no ‘e’ in whisky on our label - that’s a BIG clue! We’re expecting to get around 254 bottles at 45.8% abv.
NOSE
Lush vanilla, toasted brown sugar draped over warm apple pie, with gingersnaps and cinnamon sticks.
TASTE
Caramelised nuts, charred cask notes unfolding into earthy cigar box and vanilla bean, with a hint of maple syrup subtly woven in.
ABOUT THE LABEL
Tennessee whiskey must be filtered through charcoal (this filtering step is known as the Lincoln County Process) prior to aging the whiskey. Our original label features a whole load of sugar maple on fire, making charcoal, in some sort of hollow.
We’ve just decided to bring this rick of sugar maple front and centre for this label evolution.
