Now here’s an interesting twist on our delicious Canadian corn whisky. This release marries whiskies finished in Pedro Ximenez and ex-Islay octaves.
It’s the Canadian corn that we all know and love (the 5% rye mashbill) with an interesting dimension of Pedro Ximenez Sherry, with a hint of Islay.

Maize, which is commonly known as corn in Canada, is primarily grown in the southern regions of the country where the climate and soil conditions are suitable for its cultivation. The provinces of Ontario and Quebec are the largest producers of corn in Canada.
Ontario is the leading province for corn production in Canada. The southwestern region of Ontario, including areas around cities like London, Chatham-Kent, and Windsor, is particularly well-suited for corn cultivation due to its fertile soil and favorable climate conditions.

Sweet and savoury, candied beer nuts, cherry compote, and a mysterious “what IS that?”. Fun!
TASTE
The smallest impression of smoke before a big spice explosion and rich maple sweetness, all balanced by oak and beautifully bodied spirit.

You’ll notice that dartboard has been brought front and centre on our Core Canadian red for this label, yes that’s Dr. Whisky they have hastily drawn and posted onto the dartboard. Why Islay green dart flights? Well that has something to do with the ex-Islay cask finish…it’s all in the details
