Peat is a type of organic material that forms in waterlogged, acidic conditions, typically in areas like bogs and wetlands. It consists of partially decayed vegetation, including mosses, grasses, and shrubs.

Peat has been used as a fuel source for centuries and is also an essential element in the production of some Scotch whiskies, particularly those known as "peated" or "smoky" Scotch whiskies.

The use of peat in Scotch whisky production adds a layer of complexity to the flavor profile. The level of peat can influence the whisky's aroma and taste, and it often appeals to those who enjoy the smoky and earthy notes in their drinks. Peat levels in Scotch whisky can vary significantly. The degree of peatiness is often measured in phenol parts per million (PPM). Scotch whiskies can range from lightly peated (around 5 PPM) to heavily peated (50 PPM or more).

HIGHLANDS and ISLANDS

Ardmore Batch 9, 19 Year Old - Our 19 Year Old is from September 2003, and after spending time in the good ol’ refill hoggie, it was re-racked into a first-fill PX sherry cask.

N: Rich, stewed, fruits; blackberry and apple with warm spices compliment sweet toffee apple aromas.
P: Soft raspberry jam and subtle cracked black pepper lead to a hint of oak, and a woody smoke. Dried fruit lingers on the smooth and light finish.

Croftengea Batch 5, 11 Year Old - One of the elusive single malts produced at the versatile Loch Lomond distillery. Our Croftengea, from 2007, has been matured in the industry standard, a refill ex-Bourbon hogshead, so this is all about the distillate: briny, salty and smoky.

N: Sea shells, brine, oysters, and a hint of green olives. There’s a green malt sweetness, grist, and fresh sawn oak.
P: Sweet yet spicy with a lick of maritime and dusky peat. Sea salt, oysters and driftwood. Oak spices, amd a lingering peppery finish.

Highland #5 Batch 1, 18 Year Old - A brand new Secret Highland single malt for your tasting pleasure. An 18 Year Old single malt from the Highland region of Scotland, from 2004/05, and a marriage of an ex-Bourbon barrel and Oloroso octave.

N: Sweet smoked honey, rich toffee, with some orchard fruits behind some delicate campfire smoke
P: A rich, sweet, smoky character. Toffee apples coated in warming spices, A long finish with wood smoke, caramel, and vanilla.

Inchfad Batch 3, 15 Year Old - Another of the elusive single malts produced at the versatile Loch Lomond distillery. This 15 Year Old was distilled in 2007 has been matured separately in an ex-Bourbon barrel and a PX Octave

N: Seaside grasses, and broken seashells. There's a fruity note of kiwi fruit and unripe plums, Eventually some light grassy smoke comes through.
P: Malt loaf, black tea and salted peanuts and some spicy ginger. A salty, flinty, drying finish with drifting beach campfire smoke.

Ledaig Batch 21, 21 Year Old - 1997 Sherry Butt.

Outturn 567 bottles 58.2% abv (NCS) rrp £124.95

N: Oily, earthy, and herbal. Forest floor, smoked cheese, briny olives, sour lemons and some light tobacco notes
P: Oily mouthfeel with cracked black pepper, bramble jelly, earthy peat, black tea tannins, tobacco and clove. A long peppery finish with charred oak smoke.

ISLAY

Caol Ila Batch 23, 14 Year Old - From a refill hoggie laid down in December 2008, we’ve re-racked this Caol Ila into first fill Oloroso Octaves to give a bold fruit flavour.

N: Salted caramel and apple chutney. Driftwood beach campfire smoke with a hint of charred lemons
P: Salted roast almonds, hints of pineapple, ginger sponge cake. Peppery spices, linger in the sweet ashy finish.

Islay #3 Batch 6, 29 Year Old - A glorious 29 Year Old unnamed Islay malt that was distilled in 1993 and and some of it has been finished in Oloroso Octaves by ourselves.

Outturn 513 bottles 52.1% (NCS) abv rrp £279.95

N: Dried tropical fruits; mango, papaya, and even a hint of pineapple, with some oily cedarwood and some smoking herbs; sage perhaps?
P: An oily mouthfeel, with spicy ginger, fruit orange peel, aromatic cedar, hints of mint barbeque smoke and salty sea air..

Islay #3 Batch 7, 13 Year Old - A glorious 13 Year Old unnamed Islay malt that was distilled in 2009 and some of it has been finished in an Oloroso Octave by ourselves.

Outturn 572 bottles 58.1% abv (NCS) rrp £74.95

N: Pungent medicinal notes; germolene and cotton back plasters. Zesty lemon juice, crab shells and mineral oil. Some herbal notes of dried rosemary , and a hint of petrichor.
P: Sweet citrus, brine, and a flinty mineral note. It’s a medicinal, with cooling menthol and sweet herbal heathery smoke lingers with some dried thyme.

Octomore Batch 3, 6 Year Old - Sherry Cask finished.
