A brand new label for this first batch from Bristol’s Circumstance Distillery.
An English distillery, founded in August 2018, in Bristol specialising in organic grains and long fermentations. These principals, with organic grains and non-traditional yeasts, produce extraordinary spirits.
Organic mash bills, beer and wine yeasts, and long open fermentations
This is a spindle aged wheat spirit - it’s a Single Grain. Charred English oak spindles have been used to mature the spirit in a non-traditional way. The wheat spirit has been matured in a drum, with the charred oak spindles suspended in the spirit.
Maturation is all about a balance between the new make spirit and the wood.
Outturn of this release: Just 75 bottles at 59.8% abv
Nose
A bold and really interesting nose with grain husks, rye toast, gingerbread and flint
Palate
Young and vibrant with notes of burnt sugar and a savoury minerality
ABOUT THE LABEL
Our label plays on the Psychopomp Micro Distillery sister distillery where it all started.
The setting is a trading floor come distillery room, with three Psychopomp figures trading grains against cryptocurrency. Their still and columns alongside their signature spindles are dotted around.
A statue of Isambard K Brunel ties us to Bristol and is that hooded figure, stencilling Clifton Suspension Bridge Banksy?
